  • 2 large eggs
  • 3 medium ripe bananas,
  • 3 cups flour
  • 3/4 teaspoon baking soda
  • 2 teaspoons vanilla essence
  • 2 cups sugar or brown sugar
  • 1/2 cup dark chocolate chips (optional)
  • 1 teaspoon cinnamon or similar spices (optional)
  • Pinch of salt (optional)

1. Preheat the oven to 180 c (350 f)

2. In a big mixing bowl, cream together butter and sugar until light, fluffy and pale yellow.

3. Prepare three mixing bowls by adding beaten eggs separately. Set aside.

9. To serve, unwrap the cake from the freezer, remove it from the tin and leave it on a cutting board or serving platter. Slice into 8-10 pieces with a sharp knife.
