Making the Cake

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, then line the bottoms with parchment paper.
  • Sift the dry ingredients: In a medium bowl, sift together the cake flour, baking powder, and salt. Set aside.
  • Cream the butter and sugar: In a large mixing bowl, beat the butter and granulated sugar on medium-high speed until light and fluffy, about 3-4 minutes.
  • Add the eggs: Add the eggs one at a time, beating well after each addition.
  • Combine wet and dry ingredients: With the mixer on low speed, add the flour mixture in three parts, alternating with the milk. Begin and end with the flour mixture. Beat until just combined. Add the vanilla extract and mix until incorporated.
  • Bake the cakes: Divide the batter evenly between the prepared pans. Smooth the tops with a spatula. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the cakes: Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Making the Frosting

  • Beat the butter: In a large bowl, beat the butter on medium speed until creamy, about 2 minutes.

Assembling the Cake

  • Level the cakes: If necessary, use a serrated knife to level the tops of the cakes.
  • Frost the first layer: Place one cake layer on a serving plate. Spread about 1 cup of frosting evenly on top.
  • Add the second layer: Place the second cake layer on top and spread a thin layer of frosting over the entire cake to create a crumb coat. Refrigerate for 20 minutes.
