Ingredients
  

For the Crust:

  • 1 ½ cups of crushed graham crackers
  • ¼ cup sugar
  • ¼ cup unsalted butter melted

For the Cheesecake Filling:

  • 16 oz 2 packages cream cheese, softened
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 1 ½ cups sour cream
  • ½ cup green food coloring preferably gel

For the Topping:

  • Red sprinkles or red hot candies
  • Mini chocolate chips optional

Instructions
 

Step 1: Prepare the Crust

  • In a medium-sized bowl, mix together crushed graham crackers and sugar.
  • Add the melted butter and stir until the mixture resembles wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  • Chill the crust in the fridge for 15-20 minutes to set while you make the filling.

Step 2: Make the Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add powdered sugar, vanilla extract, and peppermint extract, and beat until fully combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture gently.
  • Add sour cream and green food coloring, mixing until the desired Grinch green color is achieved.

Step 3: Assemble the Cheesecake

  • Pour the cheesecake mixture over the prepared graham cracker crust, smoothing the top with a spatula.
  • Refrigerate the cheesecake for at least 4 hours, or overnight, for the best results.
  • Once set, garnish with red sprinkles or mini chocolate chips for a festive touch.

You can make this cheesecake a day in advance, making it a perfect option for Christmas parties.
