  • 1/3 cup shortening
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas about 2 bananas
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a medium-sized bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a separate large bowl, cream the shortening and sugar until light and fluffy.
  • Beat in the eggs, one at a time, until fully incorporated.
  • Add the mashed bananas, milk, and vanilla extract to the wet mixture and stir until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Pour the batter into a greased 9-inch (23 cm) loaf pan.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
