Ingredients
  

For the Cake:

  • 2 cups fresh strawberries hulled and diced
  • 1 cup Hennessy cognac
  • 1 cup unsalted butter softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup whole milk
  • 1 tsp vanilla extract

For the Strawberry Hennessy Buttercream:

  • 1 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1/2 cup strawberry puree from fresh strawberries
  • 2 tbsp Hennessy cognac
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions
 

Preparing the Strawberry Hennessy Cake:

  • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Strawberry and Hennessy Infusion:

  • In a blender, combine diced strawberries and Hennessy cognac. Blend until smooth and set aside.

Creaming the Butter and Sugar:

  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Adding the Eggs:

  • Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next.

Dry Ingredients:

  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combining Wet and Dry:

  • Alternate adding the dry ingredients and the strawberry-Hennessy mixture to the butter-sugar-egg mixture, starting and ending with the dry ingredients. Mix until just combined.

Milk and Vanilla:

  • Pour in the milk and add the vanilla extract. Mix until the batter is smooth.

Baking the Cake:

  • Divide the batter evenly between the prepared cake pans. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a cooling rack to cool completely.

Preparing the Strawberry Hennessy Buttercream:

  • In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, strawberry puree, Hennessy cognac, vanilla extract, and a pinch of salt. Beat until smooth and fluffy.

Assembling the Cake:

  • Place one cake layer on a serving plate, spread a layer of buttercream on top, and then place the second cake layer. Frost the top and sides of the cake with the remaining buttercream.
