For the Cake:
- 2 cups of all-purpose flour
- 1 1/2 teaspoons of baking soda
- 1/4 teaspoon of salt
- 1/2 cup of unsalted butter softened
- 1 cup of granulated sugar
- 2 large eggs
- 1 teaspoon of vanilla extract
- 4 ripe bananas mashed
- 1/2 cup of sour cream
For the Frosting:
- 1/2 cup of unsalted butter softened
- 1 teaspoon of vanilla extract
- 2 cups of powdered sugar
- 3 tablespoons of milk
Preparing the Cake Batter
Start by preheating your oven to 350°F (175°C) and greasing two 9-inch round cake pans.
In a mixing bowl, combine the flour, baking soda, and salt. Set aside.
In another bowl, cream the softened butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients mixture to the wet ingredients, alternating with mashed bananas and sour cream. Begin and end with the dry ingredients.
Making the Frosting
While the cake layers cool, prepare the frosting. In a mixing bowl, beat the softened butter until creamy. Add vanilla extract.
Gradually add powdered sugar, one cup at a time, and beat until well combined.
Add milk to reach your desired consistency.
Assembling the Cake
Once the cake layers are completely cooled, spread a generous amount of frosting on top of one layer.
Place the second cake layer on top and frost the entire cake, including the sides.
